Santagata 1907 organic extra virgin olive oil has been chosen to be part of the “Seven Oils for Seven Days” column in Olio Officina Magazine, Olio Officina’s editorial for all oil enthusiasts and all those who like to experiment in the kitchen, learn about new flavors and pairings.
Our organic comes from a mix of different cultivars and is a versatile product, suitable for all kinds of uses. Ideal with trofie pasta with pesto alla Genovese, or spaghetti with arugula pesto, it is yellow to the eye with slight greenish hues and clear in appearance. The nose has fruity scents of olive and almond tones of medium intensity. On the palate it is soft and round, harmonious, with sweet initial impact. It has vegetal taste with references to field vegetables and in particular artichoke, and mild bitter and spicy notes. On the finish a slight spicy note and hints of almond, pine nut and field herbs.
