Presented the fourth edition of TavoleDOC Liguria: new entries and a strong desire to enhance the excellence of the territory

27th March ’23, Genoa – Lovers of high quality, of Liguria and its specialities couldn’t wait any longer: once again at the Palazzo della Regione, the Multiverso publishing house presented the fourth edition of the only regional guide that focuses on the best restaurants from Ponente to Levante, constituting a true Table of Excellence.

Important numbers for this collection that every year makes its philosophy an essential starting point, i.e. the idea that it is the individual regional cuisines that make Italian cuisine great: 54 participating restaurants, 33 producers and 45 perfect pairings that accompany the recipes of each chef. This edition is once again under the patronage of the Region and proudly bears the introduction of President Giovanni Toti, testifying to the fact that the jewels of the restaurant and production sectors represent realities to be valorised and indispensable destinations for food and wine tourism, a fundamental resource for those whose goal is to appreciate Liguria in Italy and around the world.

TavoleDOC Liguria has been revamped with a new cover that immediately suggests the richness of its proposal: from the sea to the hills, passing through the towns and vineyards that decorate the sumptuous landscapes, the focus is on the great variety that the land has to offer. With the registration of the TavoleDOC label, the guide confirms its determination to continue its mission by protecting its identity and the uniqueness of all those who animate it.

Hosted by the Region, the Transparency Room welcomed the protagonists of the Guide and its adherents. Honoured for its participation, the presentation began with a speech by the Vice President of the Liguria Region in charge of Agriculture and Territorial Marketing, Alessandro Piana: ‘Traditions, flavours, links with the territory. These are the key points for enhancing the entire agrifood chain, which is the engine of economic recovery and a living community fabric from the coast to the hinterland. This is why the Department wholeheartedly supports an important project such as TavoleDOC Liguria, in which agrifood excellence and fine dining in Italy are made accessible and promoted with authenticity, from respect for the material to the elaborations of the masters of haute Italian cuisine. A valuable guide both for connoisseurs and for the general public, from which to take inspiration for real taste milestones: wine and food tourism is in fact inextricably linked to culinary experiences, production processes and the specificities of the territory’.

Although not physically present, editor-in-chief Elio Ghisalberti brought his testimony by emphasising the richness of the Mediterranean diet and how much the variety of its elements is the envy of the rest of the peninsula. Following this, editor Petra Cucci told about the important recognition obtained at the TTG Travel Experience in Rimini: the GIST Food Travel Award 2022 was awarded to the third edition of TavoleDOC Liguria, for the category ‘Best publication on food and wine tourism’. He then had the pleasure of presenting the new members: no less than 13 restaurants that have joined the region’s most coveted Table of Excellence.

The first author of the project, as well as the one who animates it on a daily basis and makes it concrete, Mario Cucci spoke about the great changes in the world of catering, especially at the high level, emphasising that networking is a quick response to the difficulties and opportunities that arise from time to time.

CNA Genoa Secretary, Barbara Banchero, also made a significant speech: she was pleased to talk about the forthcoming Cucina Liguria event for the promotion of the entire regional cuisine supply chain, and about the cooperation established with the TavoleDOC circuit. He also emphasised that restaurants, wineries and producers are to all intents and purposes enterprises whose value should be preserved, because they are reference points for the economy and an attraction for tourism.

The press conference closed with the testimony of Giorgia Losi, who together with her young brigade manages the Quelli dell’Acciughetta restaurant: happy to have joined the circuit, she spoke of constructive competition with the aim of bringing young people closer to the new Ligurian restaurant realities.

A rich and important presentation, as the fourth edition of TavoleDOC Liguria is characterised by: a further step towards the enhancement of Ligurian cuisine and the dissemination of its culture and peculiarities.

Those present then moved to Ivano Ricchebono’s The Cook restaurant for a celebratory gourmet aperitif, where it was possible to taste the guide’s paired labels and celebrate the milestone achieved by the publisher Multiverso, the TavoleDOC circuit and all the diners at its Table of Excellence.
