Oil and Catering Forum 2024 – Seventh Edition

Cristina Santagata was present at the seventh edition of the Oil and Catering Forum organised by Olio Officina and spoke on ‘mise en place’ . The event took place on Monday 27th May 2024 in Milan at the splendid halls of the Cascina Cuccagna.

Why is mise en place important? Is it necessary to enhance extra virgin olive oils in restaurants? The aim of the forum is precisely to compare notes in order to suggest proposals but also to welcome proposals from those who work in restaurants, because the dining room plays a fundamental role and should always be carefully monitored and followed.

This year was the seventh edition of the Oil and Catering Forum organised by Olio Officina, which took place in a new location, in via Cuccagna 2/4 in Milan at the splendid halls of Cascina Cuccagna, a very beautiful and fascinating rural structure dating back to the 17th century.

The event consisted of several appointments starting in the morning in the different rooms of the farmstead and ending with the final meetings in the afternoon, which were followed by the Milan International Olive Oil Award prize-giving ceremony.

A dialogue with many voices’ together with Andrea Carrassi (Assitol), Chiara Cesarini (Cesarini Sartori), Cristiana Mela (Frantoio di Sant’Agata d’Oneglia), Francesca Petrini (Fattoria Petrini), and the protagonists of food & beverage, including Federica Ottolina, head of supplier qualification and product control at Piattaforma Metro Italia, Matteo Scibilia, chef, and Antonello Maietta, sommelier.
