The contest “The Healthy Snack”, developed by the Institute Giancardi of Alassio and promoted by “Il Secolo XIX”, in collaboration with Coop Liguria and Santagata – attended by numerous Ligurian hotel schools – has awarded the recipe proposed by the young chef Enrico Sciopero, student at the High School “Bergese”.
Cristina Santagata, president of Santagata company, was member of the jury. Among the ingredients could not miss the extra virgin olive oil: “Santagata for 110 years lives the Ligurian territory giving high attention to the youngers and their nutrition. Our support to initiatives such as “The Healthy Snack” organized by “Il Secolo XIX”, is born from the desire to leave a tangible sign on the development of our territory and take concrete actions to raise awareness for the health of young people in our territory.”
The winning recipe is a hazelnut muffin that includes the following ingredients: 200 g hazelnut, 200 g sugar, 4 eggs, 1 packet of yeast, 50 ml of oil EVO. For the preparation, you need to mount the egg yolks with sugar and add hazelnut flour with baking powder and oil. Then beat the egg whites until stiff and incorporate them without disassembling. Finally bake at 180 degrees for 30 minutes. In case of allergies, you can replace the hazelnut with crumbled dark chocolate.
